Food

I've said it before and I'll say it again...one of the best things aobut NYC is the food.  However, the food you are about to experience isn't food from NYC, it's from me!!! Yes, I can, in fact, cook!

One of my favorite meals is making breakfast for myself.  I love to use what I have an whip up an appetizing creation.

Breakfast Sandwhich
Grilled ham, egg, and cheese on wheat toast.

Use What You Have Omelet
1. saute vegetables in separate skillet.  I used tomatoes, orange and yellow peppers, and arugula

Whisk 2 eggs and a little bit of skim milk together in a bowl.  Pour mixture into a bigger frying pan.  Let the egg cook until the sides start to solidify.

After most of the egg is cooked on one side, flip eggs over.
Place sauteed ingredients on top of eggs...
top with mexican cheese.

Fold over as you are plating the eggs.  Serve with a nice hot cup of joe and a side of fruit.

Enjoy!

Skinny Pancakes with Fresh Strawberries

Bon Appetit!

The Weekend Update

Well I am slowly but surely trying to get back into things.  One thing I loved writing about were my weekend updates.

This weekend has been so relaxing.  Friday after work the girls and I headed down to the financial district to hang out on Stone Street to enjoy the happy hour selections down there.  I can't wait to take my parents there when they come to visit.  The entire street is lined with picnic tables and you choose a table and that's the restaurant that you decide to eat at.  You can also eat inside if you choose.

We chose to go to Ulysse's Tavern to enjoy 3 nice pitchers of sangria.

We will definitely be going back sometime soon!
